Pink Smoothie Bowl
I've always hated the word "healthy" and the totalitarian asceticism it implies. But the thing is, healthy shouldn't have to mean restrictive, and it certainly shouldn't be unpleasurable. It's when we eat things we don't want to eat for the sole purpose of their health benefits that make momentary lapses of judgment — like diets — not stick. For me, a smoothie bowl (disregarding its hype and overly esteemed status as trendy Instagram food) is, actually, a good representation of how I've always felt one should eat. Something that tastes good, and feels ceremonious somehow — the artful placing of each berry, nut and chia trail — yet happens also to be healthy. That's the kind of food I want to eat, the kind that celebrates the notion that food has always to be more than just fuel.
1 cup frozen raspberries, plus more for topping
1/2 cup unsweetened almond milk
1 teaspoon honey
Raw coconut chips
Blend the banana, raspberries, milk, and honey until smooth. Pour into a bowl and top decorously — or crudely — with the toppings.
